Mexican farmers and their ancestors have grown corn for over 10,000 years. To make our Masa, we carry on their tradition using ancient techniques that haven’t changed much.

SOURCE: We use diverse heirloom corn varietals from independent Mexican farmers

NIXTAMALIZE: In the kitchen, we break down corn in limewater to unlock complex nutrients and flavors

GRIND: We use volcanic stones to pound corn into masa every day

PRESS: We press the masa into fresh tortillas. All our corn tortillas are made to order
